RecipesThis page gives you the opportunity to re-create some of your favourite Corfiot taverna recipes at home. This month, Baked Mackerel with tomato and garlic.
Ingredients6 mackerel. 4 tomatoes. 4 sprigs of parsley. 3 cloves of garlic. 1 spoon of sugar. Salt and pepper. 150 ml of olive oil. InstructionsClean the fish and wash with plenty of water. Season the fish with salt and pepper. Place in a heatproof baking pan. Mash three tomatoes and cut the fourth into thin slices. Crush the garlic cloves and finely chop the parsley sprigs. Pour the olive oil, the tomato and garlic on top of the fish. Place the sliced tomato on top of the fish. Add the sugar and place in a pre-heated oven. Cook at 200 - 220 degrees centigrade until the fish is baked (approximately 30 minutes). At regular intervals sprinkle the top of the fish with a spoon of the tomato sauce and turn the fish upside down to ensure itŐs baked on both sides. Archive |
